Ittetsu Hamono knives are made by two different makers. The kurouchi line is made by Tadayoshi Kajiwara-san, who works in the Tosa region. These knives are then bevelled and sharpened by Abe-san, who works in the Sanjo region. Abe-san was the former head sharpener for Yoshimi Kato-san.

The tsuchime line is factory made and hand refined in Seki city.

Both lines of knives are extremely sharp out of the box and perform very well.
